While sitting in my very boring cream coloured cube a few weeks ago I over heard people talking about Darth Tatter. All I could think was "huh"?

Thanks for setting my mind at ease!

Darth Tater isn't just from that movie. It's a real product (created separately, and, I believe, first). It's an officially licensed cross between Star Wars and Mr. Potato Head, put out by Hasbro. You can find it (among other places) here.
