Martha (and Jonathan too). Especially the former is such a fun character and I think she would have had a very colorufl past to explore. And Jon gets often a bit forgotten in comparison, so he deserved more screentime too.

I know this is two but I pick both Martha and Jonathan because it’s hard to have one without the other.
